Preparation of Kimchi Supplemented with Immunomodulatory Components Isolated from Licorice

Abstract
when we examined the immunological effects of 20 kinds of herbal hot-water extracts to prepare kimchi supplemented with immunological components, licorice (GU-0) possessed the most potent bone marrow cell proliferating activity through Peyer¢¥s patch and had natural Killer (NK) cell-mediated tumor cytotoxicity against the cancer cell line, Yac-1 cell. GU-0 was further fractionated into MeOH-soluble (GU-1), EtOH-soluble (GU-2) and crude polysaccharide fractions (GU-3) to isolate the immunological components. Among these fractions, only GU-3 showed significantly potent immunological activities. Oxidation of GU-3 with NaIO_(£´) reduced the proliferation activity of bone marrow cells and the NK cell-mediated tumor cytotoxicity of GU-3 (activity decrease of 48.7£¥ and 60.4£¥, respectively). The PH of GU-3-supplemented kimchi was slightly lower, whereas titratable acidity was a little higher than that of conventional kimchi after 4 days. Although the maximum cell numbers of the viable total bacteria and lactic acid bacteria in GU-3-supplemented kimchi were slightly lower than those of conventional kimchi, both cell numbers were similar to those of conventional kimchi after 8 days, the optimally ripening period. In addition, the sensory properties of GU-3-supplemented kimchi, including appearance, odor, taste, texture and overall acceptability, were the same as conventional kimchi. After the optimally ripened GU-3-supplemented kimchi was extracted with hot-water, the immunological activities were confirmed in vitro. GU-3-supplemented kimchi showed very potent bone marrow cell proliferating activity and NK cell-mediated tumor cytotoxicity, whereas conventional kimchi had only intermediate activities.
